Mushroom Polenta

I come from Kansas where our meals are meat and potatoes. As a child those were staples on the dinner table every night. Mashed potatoes, baked potatoes, party potatoes, roasted potatoes, you name it; my mother was the Bubba Gump potato connoisseur! When thinking of a great side dish that was elegant and substantial I started to think of something to do with corn, alas the mushroom polenta was born.

Ingredients:
For the Polenta:

  • 1/3 Cup Cornmeal
  • ½ Cup Heavy Cream
  • ½ Cup Milk
  • 1 Teaspoon Sea Salt
  • 1 Tablespoon Butter
  • 2 Tablespoons Shredded Parmesan Cheese
  • 1 Tablespoon Chopped Chives

For the Mushrooms:

 

  • 2 Tablespoons Olive Oil
  • 2 Tabelspoons Butter
  • 1 Cup Sliced Mushrooms, of your choice
  • 1 Clove Garlic, minced
  • 1 Shallot thinly sliced
  • 2 Tablespoons Chopped Chives

Directions: 

For the Polenta:

1.     In a medium saucepan combine milk, heavy cream and sea salt; bring to a simmer over a low heat. Do not heat too quickly or you may scorch your milk!

2.     Start whisking the cream mixture for about 2 minutes, add cornmeal and continue stirring for 5 minutes, continuously over a medium heat. Reduce heat to low, cover and stir every 5 minutes for about 45 minutes to an hour.

Note: I recommend you cook this before any of your other dishes, so you can let this cook for a while. The longer it cooks, the creamier it is.

3.     Just before serving, add butter, parmesan cheese and chives, stir and serve. 

For the Mushrooms:

1.     In a skillet bring olive oil, butter and minced garlic to a bubble. Add sliced chalet, allow to cook until the shallot is translucent.

2.     Add sliced mushrooms and stir well until the mushrooms, oil and butter and shallots are well combined.

3.     Allow to simmer for about 15 minutes, stirring frequently on a low heat.

4.     Add chopped chives the last 5 minutes of cooking.

5.     Top cooked polenta with mushrooms, serve immediately!

 This dish is perfect to serve alongside this delicious filet mignon topped with crumbled blue cheese!
