My Mom's Perfect Mother's Day Lunch Menu

For Mother's Day, I wanted to do something very special for my Mom.  I asked her, if she could have any meal in the world, what would she want.  This is what she told me.....

First of all, my Mom likes to sleep in (so do I!).  So none of this Mother's Day breakfast or brunch stuff.  In our world, a perfect Mother's Day starts at lunch time!  She wanted to spend her morning sleeping-in, lounging in pajama's, reading the paper and taking it easy.  She said her favorite meal would be a nice lunch spread in the early afternoon, outside if it is a nice day.

Next she told me what dishes that lunch would contain.  She must have thought of what her dream meal would be before I asked.  I wouldn't be surprised to learn that everybody has thought of their dream meal and are just waiting for someone to ask them about it and to make it for them! 

Here it is, my Mom's Perfect Mother's Day Lunch Menu:

Parmesan-Crusted Roast Chicken Breast

Crab and Ricotta Stuffed Pasta Shells- gluten-free

Lemony Blanched Green Beans with Roasted Walnuts

Baby Spinach Salad with Blue Cheese, Candied Walnuts, Dried Cranberries and Balsamic Vinaigrette

Lemon Blueberry Bread- gluten-free

Lavender Lemonade Iced Tea

Elderberry Mimosas (I threw this one in for fun)

There it is, My Mom's Perfect Mother's Day Lunch!

It took just over ninety minutes to prepare everything and it was really fun knowing how much she was going to enjoy it!

Mother's Day is really special to me.  Years ago, my mom had a heart attack.  I was traveling when that happened and when I called, I could not reach her or anyone that could tell me what was going on.  I drove all night to get home and during that long drive, I feared that I might get to her too late.  I wasn't too late.  She had surgery and wasn't in great shape but she eventually, with the help of a healthier diet and reducing her stress, made a full recovery.  I've been so grateful of all the time I've got to have her still in my life since that event.  I went to college and she was at my graduation ceremony.  I got married and she was at my wedding.  We bought a house and she has spent Christmas with us in our home.  We've been to Vegas and Napa and spent a week in Santa Barbara together.  All the little moments we've shared and phone calls that we've had are all precious to me because there was a time that it was a very real possibility that they would have never happened.
